WILDBERRY STUFFED CHICKEN BREAST

Serves 4

  • 4 – 4 oz. fresh local boneless chicken breasts
  • 1 cup fresh bread crumbs
  • ¼ cup fresh local partridgeberries
  • ¼ cup fresh local blueberries
  • ½ tbsp local savory
  • 1 tsp fresh local minced onion
  • ¼ cup apple juice
  • Salt and pepper to taste
  • Melted butter

Preheat oven to 350ºF. Cut a pocket in each chicken breast by slitting them down the side. In a medium sized bowl, combine bread crumbs, berries, savory, onion, salt and pepper. Toss lightly to combine. Add apple juice. Divide mixture into four equal portions and use to stuff each breast.

Place on a greased baking sheet. Brush with melted butter and season with salt and pepper. Bake 30-35 minutes.

Note: To barbeque the chicken breasts, tie with string that has been soaked in water and grill. Watch carefully, spraying string with water to douse flames as necessary.

BERRY SMOOTHIE

Serves 1-2

  • 1 small container of flavored or light yogurt
  • 1/3 cup local strawberries
  • 1/3 cup local raspberries
  • 1/3 cup local blueberries
  • ½ cup 2% milk
  • 4 to 5 ice cubes

Blend all ingredients, except ice, in a blender until smooth. Add ice cubes and continue to blend on high until the smoothie is frothy.

BAKEAPPLE PIZZA

Serves 12

Crust

  • 2 cups all purpose flour
  • 4 tsp baking powder
  • ½ cup butter or margarine
  • ¼ cup sugar
  • 1 fresh local egg, beaten
  • ½ cup fresh local 2% milk

Preheat oven to 350ºF. Sift together flour, baking powder and sugar. Cut in margarine until crumbly. Gradually add egg and milk. Miss until stiff dough forms. Press dough onto greased 12” pizza pan. Bake for 15 minutes. Cool completely.

Sauce

  • 1 cup softened cream cheese
  • ½ cup sour cream
  • ½ small tub of whipped topping

Cream together softened cream cheese and sour cream. Fold in softened whipped topping. When well combined, spread mixture evenly over completely cooled crust.

Topping

  • 2 cups local fresh or frozen bakeapples
  • ¼ cup sugar
  • NOTE: Any local berries can be used instead of or with bakeapples.

Combine sugar with berries (if frozen berries are used, thaw completely before combing with sugar). Spread mixture evenly over prepared crust and sauce. Refrigerate one hour before serving.
